The immature, dried fruits, cinnamon blooms or cassia buds - and the leaves of the cinnamon tree are used in the countries of origin as seasoning.

    Ceylon cinnamon has an aromatic, sweet smell: its taste is unmistakeably sweet-hot, warm and mildly woody. The aroma of cassia is tangy and stronger than that of Ceylon cinnamon; it is also far more «pungent» and fiery in taste.
