Garlic, which is described as a bulb in botanical terms, is used as seasoning. Bulbs are subterranean rhizomes which have formed from leaves. The fresh leaves are rarely used as well.

Taste

The characteristic, almost overpowering aroma of garlic differs greatly, depending on whether the cloves are fresh or dried. Raw garlic loses its distinctive sharpness when it is cooked or roasted.
