Seasoning: the young, thin, detached and dried outer layer of the young twig shoots or root stocks. They occur mostly rolled stick in form, or gorund. The immature, dried fruits, cinnamon blooms or cassia buds - and the leaves of the cinnamon tree are used in the countries of origin as seasoning.
Taste
Ceylon cinnamon has an aromatic, sweet smell: its taste is unmistakeably sweet-hot, warm and mildly woody. The aroma of cassia is tangy and stronger than that of Ceylon cinnamon; it is also far more "pungent" and fiery in taste.
