Spice labelling
The fresh and dried leaves are used as seasoning. The roots and fruits have the same aroma as the leaves, and can be used for an even more intensive lovage flavour, or if there is no fresh herb available.
Taste
Lovage has a strong, spicy flavour which develops best when you rub the leaves. At the beginning, it tastes sweet, then spicy, and is slightly reminiscent of celery.
