The rhizomes are used fresh or dried as seasoning. The leaves are also aromatic; however, they are rarely used as seasoning. The same applies for the seeds, which you can use as a replacement for cardamom.
Taste
Galangal root has a pleasant, spicy smell and an aromatic, hot stinging, mildly bitter taste that is reminiscent of ginger.
